Mystery Cheese – Approx 150g
We want to surprise and delight you every-time you open your cheese club delivery! Each of our season pass deliveries will include a mystery cheese, we love surprises and hope you do too!
Beverage – Put on your cheese pairing hat – What would you pair with the cheese? Tell us your match made in heaven!
Cow Persian Feta – 110g
Persian Feta is a gift from the gods. We’ve said it before, we’ll say it again. Not only does the cheese (set overnight in a traditional lactic set, giving it a creamier consistency than normal feta) taste amazing, but the marinade!
Oh, the marinade!
A blend of vegetable and olive oil is boosted by our special herb and spice blend. This not only infuses the Persian Feta with rich, unexpected flavours, but it also doubles as a no-fuss salad dressing.
So when you eat all the cheese, don’t throw out the jar! Use it to its full potential.
We like to crumble Persian Feta on salads, eat it with crusty bread, or bake it into Mandy Hall’s Shakshuka.
Beverage: Anything! But we think a white wine works best, like the Jericho 2019 Adelaide Hills Fiano.
Manon – 100g – *Exclusive to Season Pass Customers*
Made with specially selected goat milk from the Meiglich Dairy in the Adelaide Hills, we have not made Manon since 2010!
An interesting cocktail of secondary flora is used when making the cheese, resulting in a soft pliable texture which offers a clean herbaceous mouthfeel, showing off the characters of the excellent quality milk.
The cheese is washed several times before we allow it to rest and develop a natural rind – we then wrap the cheese in vine leaves and mature for several months before release.
Serve at room temperature for optimum texture and best flavour, preferably while listening to Giacomo Puccini’s famous opera ‘Manon’.
Beverage: A savoury red wine like Pinot Noir – or a hoppy IPA!Goat Curd – 125g
Etzy Ketzy – 110g – *Exclusive to Season Pass Customers* – Gold Medal winner at WCA 2008
Goat milk is famous for running catastrophically low in Winter due to goat breeding patterns and cold weather. So, every year (around July) many of our goat cheese customers would voice their displeasure at not being able to order enough! In 2008 we decided we’d had enough.
How could we make a cheese that only requires half the amount of goat milk?
After much experimentation, the half cow, half goat washed rind free form cheese ‘Etzy Ketzy’ was created. A fine texture and subtle flavour makes Etzy Ketzy complex, but not overpowering. It has a herbaceous palate and delicate finish.
The cheese is named to honour Kris’ Greek maternal Grandfather who when asked ‘how are you today, Grandpa?’ would always reply ‘Etzy Ketzy’—50/50. Half cow, half goat…
We recommend letting Etzy Ketzy have a short rest at room temperature before serving (make sure the middle of the cheese is pliable to touch).
It is ideal for the cheese plate served with seasonal fruit or quince paste.
Monet – 120g
Like the work of the painter himself, we believe Monet is not a cheese, it is a piece of art .
Made using our creamy fresh chevre, the curds are ladled by hand and drained before being whipped with perfect seasoning. A selection of herbs and organic edible flowers that are in season decorate the cheese.
What results is not simply something pretty to look at, but a delicate cheese with complex flavours that excite you every time you take a bite.
Plus, each cheese is made by hand so no two are alike. Frame it, or eat it. Your choice.
Beverage: This cheese should be celebrated! Crack a nice bottle of sparkling wine, or a pot of Brewed By Belinda’s ‘5-Minute Call’ tea.
Rubi – 35g
More than just a miniature version of Monet, Rubi is a true artisan’s cheese.
This little goat cheese is delicate, adorable, delicious. And while it is possible to eat it in one bite, we recommend sharing it with a loved one.
Spring is the season of love right?
Try it with a bit of chocolate, we dare you.
Beverage: Again, sparkling wine is the go here – but maybe a little half bottle. Because its cuter.
We are also including a 100g packet of our locally made crackers in this month’s pack so you can tuck in as soon as your delivery arrives!
